Cool Pesto-Drizzled Butternut Squash Soup

We’re going to let you in on one of our favorite life hacks and secrets for you know those days you don’t want to cook. Who doesn’t love a good ‘ole bowl of soup every now and then? After all, soup makes a great, no-fuss meal! This one is not only delicious but also really easy to put together in a pinch!

Ingredients, 1 Serving 

  • 1 cup Pacific Natural Foods: Organic Light Sodium Creamy Butternut Squash Soup
  • 1.5 tsp pesto sauce (we love Gotham Greens vegan pesto!)

Optional Garnishes: 

  • 4 ounces plain non-dairy Greek yogurt (we love Kite Hill one!)
  • 1 tbsp pumpkin seeds)

Directions

Simply place the soup in a pot on the stovetop for about 10 minutes on medium heat, or until desired temperature is reached. {If you would like, you could eat this cold: simply pour the soup into a bowl and allow it to chill in the refrigerator.} After pouring into your favorite soup bowl, decorate the soup by drizzling the pesto sauce on top and finishing with a dollop of yogurt + seeds.
